Quinoa contains saponins as a defense mechanism of the plant. When processing quinoa, these saponins need to be removed as they are antinutritional factors that reduce mineral and protein absorption.
Our processes include cleaning and pearling/polishing to get rid of the saponins, as well as grinding solutions to further process quinoa into flour.
